About the Role  
This is an exciting opportunity to join Rydges Newcastle as a Sous Chef , working alongside our talented and dedicated kitchen team. You'll play a key role in leading daily operations at the Wharf 350 restaurant & bar, a kitchen that champions seasonal produce and paddock-to-plate principles. Expect dishes that are thoughtful, flavourful, and beautifully plated—from Yellowfin Tuna Tataki to Riverina Angus Rump and indulgent desserts like our signature Black Forest. You’ll help deliver high-quality food across all areas of the hotel while maintaining top culinary standards, food safety, and team productivity. This hands-on role offers the chance to grow your skills, contribute to a dynamic kitchen culture, and develop your career across all aspects of venue operations.  

Skills & Experience  
•    2-3 years' experience as a Sous Chef in hotels, restaurants, and an understanding of banqueting and events.
•    A genuine passion for food and experience across all kitchen sections.
•    Strong communication skills and a positive, can-do attitude.
•    Attention to detail, well-presented and high standards of cleanliness.
•    Ability to multitask and perform under pressure, while still delivering a high standard.
•    A strong work ethic and commitment to excellence.

Key Responsibilities  
•    Lead daily kitchen operations, ensuring high-quality food production across all hotel outlets. 
•    Maintain top culinary standards, food safety, and hygiene practices at all times. 
•    Supervise and support kitchen staff, fostering a productive and collaborative team environment. 
•    Monitor stock, control costs, and help achieve budget targets for food and labour. 
•    Collaborate with F&B teams to deliver smooth service for restaurant and banquet functions. 
•    Stay ahead of menu trends, drive innovation, and consistently exceed guest expectations.

The Porter House Hotel is a stylish sanctuary, blending architectural design with the charms of yesteryear. With 122 guest rooms designed for the modern traveller, fitness centre, outdoor heated swimming pool and a hospitality destination spanning three unique venues, The Porter House Hotel is a place to meet and explore, to linger and find yourself happily lost within. Trippas White Group manages the hospitality operations at Porter House - including a la carte service, events, in-room dining etc.



We are currently recruiting for a skilled Junior Sous Chef to assist our team to deliver an exceptional food service experience. This hands-on role will require you to work as a key member of the kitchen team, assisting with different areas back of house in the kitchen from cooking and preparing dishes for service, in-room dining and events. You will be training new and junior staff, and carrying out stock inventory management duties too. You will also manage labour, financials and kitchen costs.



Experience Required:

2+ years' Experience in general food preparation and presentation in a high volume, high end venue

Food and hygiene food safety certificates preferred.

Great personal grooming, presentation, and a confident and pleasant manner

Excellent verbal communication.
