**What We Need From You:**
The ideal candidate will have:

**About the Role**
As Sous Chef with **Rick Stein at Coogee Beach®** , you'll take the lead during service, oversee kitchen operations and craft exceptional signature dishes that truly leave a lasting impression. + Deliver exceptional dining experiences by ensuring consistent quality in food preparation, flavour, and presentation across all outlets and service styles
+ Lead daily operations including food prep, cooking in service and plating
+ Work with Head chef to ensure consistency in menus that reflect seasonal ingredients, current trends, and customer preferences
+ Ensure optimum ordering of food stock & accurate stock take
+ Monitor food costs and implement measures to control expenses
+ Supervise daily kitchen activities, plan and assign work ensuring you always have the right staffing numbers and labour costs are managed effectively
+ Train and develop your team and improve their performance through coaching, feedback and recognition
+ Work with the Head Chef to recommend or initiate any HR related actions where needed in terms of recruitment or performance management
**What we need from you**
+ Full working rights in Australia without restrictions
+ 5 years' experience working as a chef in high-end specialty restaurants with at least 2 -years supervisory experience in kitchen operations in a similar role
+ Certificate IV in Commercial Cookery is essential
+ A true love of good food
+ Ability to inspire passion, enthusiasm and positivity in the team to drive an engaged, winning culture.
+ Excellent verbal and written communication skills and the ability to engage well with both the team and guests
+ Understanding and demonstrated adherence to Australian food standards
+ Mandatory certifications include Food Safety Certificate and First Aid.
+ Experience working in an open kitchen environment would be an advantage
+ Holds a current food safety certification

**The Opportunity**
In this role, you will support the preparation and execution of banquet culinary/kitchen operations, working closely with Sales and Event Planning teams, as well as Food & Beverage associates, to deliver exceptional dining experiences for every event. + Assist in the production and plating of dishes, ensuring consistency, quality, and presentation

+ Support mise en place and ensure timely preparation for all banquet services
+ Collaborate with the wider kitchen team to ensure smooth and efficient service delivery

**Profile**
